Why this coffee you ask, let me spin you a story…

In my many years working with coffee around the globe I had become a huge fan of coffees from Guatemala as people pleasers with versatility. Always filled with sweet flavours of caramel and apple, sometimes spice or stonefruit, they are universally recognisable as quality coffees yet complex and structured enough to impress the coffee geeks and wine wonks among us.

Ricardo Zelaya at Santa Clara has been amongst the very best producers not just from Guatemala but the world over. A 4th generation farmer, he is as progressive as he is meticulous in the field as well as at the mill.

When we realised we had the chance to purchase a small amount of a Naturally Processed lot, where the coffee dried inside the fruit, we got very excited and raised our hands very enthusiastically in an importer's direction hoping for samples. Once we were able to get our hands on these and taste them we were immediately certain we would buy as much as we could afford and show the world what we were trying to do. The coffee's profile is exactly what we were trying to showcase. An exceptional coffee that everyone can understand and love. Full of berries, chocolate, and custard year after year, it has an elegant floral note that shifts with the seasons presenting itself in various ways. In the past, guava, blueberry or a gentle almond. This year floral and ethereal; hard to pin down.

Every year for our birthday we put Santa Clara through our grinders in our coffee bar for our local community roasted especially for that purpose. This year we are offering it to everyone as our latest limited release, our first aimed squarely at espresso drinkers.
