Consider this our signature coffee. Sometimes a blend, sometimes not. Always designed to be balanced, sweet and textural. Roasted for Espresso but enjoyed with milk, or without. There are no hard and fast rules with this one - brew for filter, french press, batch brewer, stovetop. Hell, even a saucepan if you like. You do you, boo.
Bolivia - Finca Choque
Smooth · Jammy · Caramel · Almonds
Process: Washed
Variety: Red Catuai
Coffee from Bolivia makes great espresso. Sweet, balanced, creamy, and with a comforting hazelnut note that makes you yearn for it through these winter months.
This lot comes from high in the hills where the Andes meet the Amazon, on a farm owned by Mario Choque, aptly named Finca Choque. Mario practices agroforestry, an approach that diversifies the crops in a field much like nature, yielding healthier soil, more resilient ecosystems, and providing multiple income streams for the community. He is also a member of a cooperative, El Ceibo, that helps educate on sustainable and organic practices.

Old school. Because we're not here to judge. Just make delicious coffee. Everyone deserves access to excellent coffee, sourced responsibly. We developed Moonlight for all those dark roast lovers out there. The challenge is always to create a rich, bold brew without the burnt or bitter flavours. Sweet, low acid, and true to origin. Hard work. The hardest thing we do.

Island coffee. I'm thinking Hawaii? Jamaica? Madagascar? Nope. Rwanda.
Gishamwana Island lies just off the shore of Lake Kivu, the lake that separates Rwanda from the Democratic Republic of Congo. Pretty cool, right? An island, in a lake, 1600 meters up in the air amongst the hills. Great story. Great coffee.
The nature of the estate being on an island means cooler temperatures at night, and the cooperative farms under a dense canopy help the coffees ripen slowly, creating deep sweetness.
